It doesn't take a second guess as to which metropolitan island this classic cocktail was invented. Often calling for American Whiskey, our English Spiced Vermouth stands up well at a 2:1 ratio (whiskey to vermouth), without the need for the addition of extra bitters. Here, we have substituted in our Peated English Whisky, reversing the recipe to reduce the dominance of the peat and let our vermouth shine.

Method

Take a mixing glass and combine a double measure of English Spiced Vermouth with a single measure of Peated English Whisky. Add ice and stir to combine, chill and dilute. Strain into a chilled cocktail glass and garnish with a maraschino cherry.
